Coconut milk rice

Method
  1. Grind ginger, garlic, redchillies with curd into paste.
  2. Add oil and ghee in a large pan saute onions well.
  3. Now add tomatoes and the grounded paste and saute well till oil separates.
  4. Now add coconutmilk and bring to boil.
  5. Add rice and salt and cook in low flame till rice is cooked.
  6. Fry cashewnut and add to the rice.
  7. Garnish with coriander leaves.
  8. Serve hot with onion raita.

Ingredients:
2 cups - fresh coconut milk
1 cup - Basmati rice
1 tbsp - curd
4 nos - red chillies
1(big) - onion
1 - tomato
ginger
garlic
cashewnut
salt
3tsp - oil
ghee - 1 tsp
