Banana Stem Nutri Salad

Method
  1. Dice fine the banana stem.
  2. Soak in buttermilk with a pinch of salt.
  3. This prevents the discolouration of the stem.
  4. Take a mixing bowl.
  5. Toss in all the ingredients.
  6. Squeeze out the banana stem form the buttermilk and add to the rest of the ingredients(except the dressing).
  7. Toss well.Add salt, sugar and pepper. Toss.
  8. Take a salad bowl. Line the bowl with lettuce or cabbage leaves.
  9. Put in the tossed vegetables in the center of the bowl and keep the salad in the fridge.
  10. In a jar add all the dressing ingredients.Shake well.
  11. Just before serving the salad, add the dressing and toss well with a fork.
  12. Serve as a side dish or just have it with bread.
Ingredients:
tender banana stem - 1
cooked baby corn kernels - 1/2 cup
diced pineapple pieces - 1/2 cup
minced green chillies - 3
red and greep capsicum (diced) - 1/2 cup
spring onion (minced) - 1/4 cup
boiled peanuts - 2 tsp
roasted sesame seeds - 1 tsp
pepper to taste
salt to taste

Dressing :
2 tsp - salad oil / olive oil
mustard powder - pinch
lemon juice - 1/2 tsp
honey - 1tsp
