Method
- If using frozen sweet corn, thaw in boiling water.
- Cut up broccoli flowerets into bite-sized pieces, leaving just a little stem.
- Cut up enough for about 1 cup of flowerets and steam till tender (usual time 5 min).
- Place all together all in a bowl. Add lemon juice, olive oil, salt and pepper. Toss well.
Ingredients:
1-2 heads broccoli
1/2 cup frozen or fresh sweet corn
1 tbsp olive oil
Juice of half a lemon
Salt and pepper
