Gluay Guan (Thai Banana Cake)
Method
- Peel the bananas.
- Use a beater or food processor to blend the coconut milk and bananas to a smooth paste.
- Saute the smooth paste in a large non-stick pan on medium heat for about 10 mins, until the mixture is dry.
- Add both the sugars and salt and continue to mix and cook until the mixture caramelizes.
- Spread on a baking sheet to a thickness of 1 inch and allow it to cool.
- Cut into 1 inch pieces and serve.
Ingredients:
6 ripe bananas
3/4th cup coconut milk
1/2 cup sugar
1/2 cup brown sugar
A pinch of salt
