Gluay Guan (Thai Banana Cake)

Method
  1. Peel the bananas.
  2. Use a beater or food processor to blend the coconut milk and bananas to a smooth paste.
  3. Saute the smooth paste in a large non-stick pan on medium heat for about 10 mins, until the mixture is dry.
  4. Add both the sugars and salt and continue to mix and cook until the mixture caramelizes.
  5. Spread on a baking sheet to a thickness of 1 inch and allow it to cool.
  6. Cut into 1 inch pieces and serve.
Ingredients:
6 ripe bananas
3/4th cup coconut milk
1/2 cup sugar
1/2 cup brown sugar
A pinch of salt
