Pineapple Upside Down Chilli Cake

  1. Grease a round cake tin.
  2. Place the pineapple slices on the bottom of the cake tin in a circular design and sprinkle the chilli flakes over the pineapple slices.
  3. Sift together the maida, baking powder and keep these dry ingredients aside.
  4. Grind the sugar in a mixer to a powder.
  5. Allow the sugar to settle down in the mixie and then add the hung curd and a portion of the oil.
  6. Blend well in the mixer.
  7. Continue to blend adding a little oil from time to time.
  8. Blend and churn till all the oil is used up.
  9. This will give you a smooth flowing batter.
  10. Take a mixing bowl and place the dry ingredients in this bowl.
  11. Slowly add the wet ingredients into the dry ingredients mixing constantly so that no lumps form.
  12. The final mixture should be smooth without lumps.
  13. Pour this on the prepared cake tin with the pineapple slices.
  14. Place this tin in a pre-heated oven and bake at 180 degrees C for 35-40 mins.
  15. Remove from the oven and cool to room temperature.
  16. Place a plate on top of the cake tin and then turn over quickly.
  17. This will mean that the base of the cake which has the pineapple slices will be on top.
  18. Therefore, it is an upside down pineapple cake.
Tinned pineapple (more or less of slices may be used as per the size of your baking dish) - 6 slices
Chilli flakes - 2 tsp

For cake:

Maida flour - 250 gms
Baking powder - 1.25 tsp
Sugar - 225 gms
Hung curd - 220 gms
Oil (sunflower oil) - 200 ml
