Badami Saagu

Method
  1. First grind the first set of ingredients into a fine paste and keep aside.
  2. This is the masala. Heat Oil in a pan and add mustard seeds into it
  3. When it starts sputtering, reduce the heat so that the other ingredients you add do not burn.
  4. You can turn on the heat when you add veggies
  5. Next add curry leaves and turmeric.
  6. Next add chopped tomatoes and after it becomes soft add other veggies and fry for a little bit until tender
  7. Add just enough salt here. Then add the masala paste.
  8. Bring it to boil.
  9. One round of boiling is enough
  10. After this, keep the lid closed so that the aroma doesn`t escape
  11. If this becomes too hot and spicy, add a tsp of sugar and another tomato (chop and fry separately)
Ingredients:
1 1/2 cups - powdered almonds
1/2 cup - onion, chopped
5 to 6 - curry leaves
4 to 6 - green chillies
coriander leaves, chopped, a handful
1 tsp - ginger
1/2 tsp - poppy seeds
1 pinch - ground cinnamon
1 pinch - ground nutmeg

For Seasoning:
about 3 cups - frozen veggies
1 - potatoes, big (chopped and cooked)
1/2 - tomatoes, chopped (about the size of 2 roma tomatoes)
2 tbsp - canola oil
6 to 8 - curry leaves
1 tsp - mustard
1/2 tsp - turmeric
