Method
- Soak gelatine in 1\4 cup of water.
- Combine watermelon juice with lime juice, Worcestershire sauce, chilli sauce, sugar and salt.
- Dissolve gelatine over a slow flame and to the watermelon juice.
- Place in refrigerator till it begins to thicken.
- Meanwhile, blanch and peel the tomatoes, remove the seeds and chop the flesh.
- Chop the capsicum (discard seeds) Cut the cucumber in half length wise,( do not peel) discard the core and chop.
- Sprinkle the chopped cucumber with a little salt and reserve.
- When the watermelon mixture is half set, squeeze out the liquid from the cucumber and mix with rest of the chopped ingredients.
- Add salt to taste and mix with the half set watermelon jelly.
- Pour in a mould and leave in the refrigerator to set.
- Unmould and serve garnished with lettuce leaves.
Note:
Blend enough watermelon pieces in a mixer to get 400ml juice.

1 - capsicum, big
1 - cucumber, medium size
2 tbsp - onion, chopped
2 tbsp - coriander leaves, chopped
4 tsp - gelatine
2 tsp - lime juice
2 tsp - worcestershire sauce
2 tsp - sugar
1 tsp - chilli sauce
1 tsp - garlic, chopped
salt to taste
lettuce to garnish
