Method
- Mix sugar with water.
- Peel and cut ginger into thin strips and add to the sugar.
- Heat the mixture, stirring, till the sugar dissolves.
- Simmer without stirring for 3-4 minutes.
- Remove from heat and cool the syrup.
- Soak almonds in hot water, peel and shred thinly.
- Cut each lychee into half and discard the seeds.
- Mix them with water melon cubes.
- Pour the cooled sugar syrup on the fruits, toss well and chill in refrigerator.
- To serve, place some fruit mixture with syrup in individual bowls.
- Sprinkle with almonds and top with a scoop of vanilla ice cream.

4 cup - water melon, cubed
2 cups - fresh lychees, peeled
½ cup - sugar
1/3 cup - water
2 cm piece - ginger
3 tbsp - almonds
vanilla ice cream to serve
