Method
  1. Heat refined oil or mustard oil in a heavy bottomed pan.
  2. Add green chilly, chopped garlic, ginger and onion.
  3. Fry all together without making it brown.
  4. Add brinjal and cook well.
  5. Add turmeric, chilly, garam masala and mixed pickle.
  6. Season well with salt.
  7. Mix well.
  8. Garnish with chopped coriander.
  9. Serve with Paratha/Poori/Chapati.
Ingredients:
Brinjal (medium size cube cut) - 1
Chopped onion - 2 tbsp
Slitted green chilly - 1/2 tbsp
Chopped garlic - 1/2 tsp
Chopped ginger - 1/2 tsp
Mixed pickle - 1 tbsp
Turmeric powder - 1 tsp
Chilly powder - 1/2 tsp
Garam masala powder - 1/2 tsp
