Raw mango rice

Method
  1. Heat oil in a kadai.
  2. Add mustard seeds and allow it to splutter.
  3. Add ginger, channa dal, moong dhal, dry red chillies, asafoetida, turmeric powder, and curry leaves. Saute for 2 minutes.
  4. Add the chopped raw mango, required amount of salt and saute for another 2 minutes.
  5. Remove from fire and add chopped coriander leaves and roasted cashews.
  6. Mix this with rice and serve hot with papad and raitha
Ingredients:
3 cups - cooked rice
1 cup - finely chopped raw mango
1 tsp - mustard seeds
1 tsp - chana dal
1 tsp - split moong dal
6 - curry leaves
2 tsp - finely chopped coriander leaves
1 tsp - finely chopped ginger
3 - dry red chillies
1/2 tsp - turmeric
A pinch of asafoetida
1 tbsp - roasted cashews
2 tsp - oil
Salt to taste
