Herbed Griddle Naan

Method
  1. Mix together all the ingredients from flour to oregano.
  2. Rub in the oil.
  3. In a small pan, combine curds and milk and heat very gently till slightly warm (It does not matter if the mixture curdles).
  4. Dissolve sugar in it and mix in the yeast.
  5. Add this liquid to the flour mixture.
  6. Add enough warm water and knead well into smooth, soft dough.
  7. Keep covered till the dough rises to double its volume.
  8. Knead the dough lightly again and divide into 8 balls.
  9. Roll out each ball into a disc, � cm thick.
  10. Cook on a hot griddle on both sides (Do not add any fat while cooking).
  11. Serve hot with curry and /or dal and raitha.

Makes: 8 naan

Ingredients:
plain flour (maida) - 2 cup
baking powder - 1/2 tsp
sodium bicarbonate - � tsp
chili flakes - � tsp
dried thyme - 1/2 tsp
dried oregano - 1/2 tsp
vegetable oil - 2 tbsp
curds - 1/2 cup
milk - 1/2 cup
sugar - 1 tsp
compressed yeast - 1 tsp
salt - 1/2 tsp
warm water as needed
