Paal Kozhukattai

Method
  1. Soak the rice in water for 30 mins.
  2. Grind the rice in mixer to a fine paste.
  3. Heat the ground paste in a heavy bottomed pan; keep the flame low and stir continuously.
  4. The paste flour will slowly thicken and will become like a chapati dough. This is the correct consistency.
  5. Now switch off the flame.
  6. Make tiny berry-sized balls out of the rice dough.
  7. You can make about 35-40 balls with 1 cup of rice.
  8. Heat 2 cups of water in a heavy bottomed pan; add the rice balls and allow it to cook completely.
  9. We can add milk if the water reduces.
  10. Add the remaining milk, coconut milk and add sugar.
  11. When the mixture starts to boil, add cardamom powder and remove from flame.
  12. We can also add jaggery instead of sugar.
  13. Garnish with saffron.
