Rainbow Sandwich Pakoras
Method
  1. Spread 1 tbsp of mint chutney on a slice of bread.
  2. Place another slice over it and spread 1 tbsp of tomato ketchup over it.
  3. Cover with a third slice.
  4. Cut the three layered sandwich into two triangles.
  5. You can trim the edges, if desired.
  6. Mix the ingredients for the batter in a bowl and add enough water to form a batter of coating consistency.
  7. Whisk the batter with the hand for 2-3 minutes to incorporate air into it.
  8. Heat oil in a kadhai (wok).
  9. Dip each triangle into the batter and deep fry till golden.
  10. Drain on a paper towel.
  11. Slice each triangle further into two.
Ingredients:
Bread slices - 6

For the spread:

Mint chutney - 6 tbsp
Tomato ketchup - 6 tbsp

For the batter:

Chick pea flour - 2 cups
Soda bicarbonate - 1 pinch
Garlic paste - 2 tsp
Red chilli powder (optional) - 1 tsp
Salt to taste
Oil for frying
