Coconut pineapple cake

  1. Set the oven temperature to 180 degree celsius.
  2. Grease a baking tray and keep it ready before following the below procedure
  3. First sieve maida, baking powder and soda together twice.
  4. Beat butter and sugar well until it becomes creamy.
  5. Add eggs to this creamy mixture and beat it with a electric blender or beater until fluffy.
  6. Gradually add maida mixture to it and blend well.
  7. Add desicated coconut and crushed candied pineapple to the cake batter and mix it well.
  8. Put the ready batter to the greased tray and bake it for 40-45 minutes

Note: Cook half a pineapple with some water and half a cup of sugar until it becomes dry. This can be substituted with candied pineapple.

1/2 cup - tinned pineapple
175g - maida
150g - sugar
1 cup - dessicated coconut
1/2 tsp - baking powder
1 pinch - baking soda
4 drops - pineapple essence
2 - eggs
100g - butter (bring it to room temperature)
