Pineapple and Cheese Salad
Method
- Put the raisins in hot water for a few minutes to soften them. Drain and cool.
- Beat the cheese until smooth, mix in the raisins and the chopped chilli.
- Arrange the pineapple slices on a bed of lettuce and top each slice with a spoonful of the cheese mixture.
- Sprinkle with chopped nuts and serve.
Ingredients:
8 slices - pineapple(fresh or canned)
2 tbsp - seedless raisins
300 g - cream cheese
3 - green chillies (finely chopped)
1/2 head - lettuce
1 tbsp - chopped walnuts
