Potatoes with mushroom, feta and pine nut stuffing

  1. Heat 2 tbsp. oil.
  2. Saute onions and mushrooms together until mushrooms are well browned.
  3. Add carrots and saute for a few mins.
  4. Add salt and pepper to taste.
  5. Remove from fire and keep aside.
  6. Scoop out the centres of the potatoes leaving a half-inch thick shell/casing.
  7. In a bowl, mix the scooped out potato pulp with the sauteed mushrooms and onion mixture, carrots, parsley, currants, feta cheese and pine nuts.
  8. Brush the potatoes (inside and outside) with butter.
  9. Place a small know of butter in each potato.
  10. Fill each potato with the mushroom, feta mixture. Sprinkle the parmesan cheese over it.
  11. Place the potatoes on a greased baking tray.
  12. Bake until topping has browned.
  13. Serve with a salsa of your choice.
2 tbsp. Oil
1 onion, chopped
2 cups mushrooms, chopped
1 carrot, grated
Salt and pepper to taste
1 tbsp. chopped parsley
2 tbsp. currants
1/2-3/4 cup feta cheese, crumbled
1/4 cup pine nuts, lightly toasted
2 garlic cloves, crushed with a pinch of salt and mixed with 1 tbsp. softened butter
2 tbsp. freshly grated parmesan cheese
4 large potatoes, boiled in salted water and peeled
