Beaten rice pudding

  1. Wash beaten rice well, mix it with curd and allow to rest for two hours.
  2. If the rice has absorbed most of the curd, you could add a little more to make the dish wet again.
  3. Mix sugar, cardamom powder and saffron.
  4. Garnish with chopped mangoes or any seasonal fruit and almond flakes. Serve cold.

1 cup beaten rice (poha)
1 1/2 cup skimmed milk curd
1 mango, chopped
1/4 tsp cardamom powder
1/4 tsp saffron
Sugar to taste
Almond flakes for garnishing
