Carrot rice

Method
  1. Soak the rice for 30 minutes.
  2. Wash and drain them.
  3. Cook the rice with water in the ratio 1:2 in a pan or pressure cooker (1:1.5).
  4. After the rice is cooked cool them in a wide plate.
  5. Chop the onions and tomatoes finely.
  6. Grate the carrot and keep aside.
  7. In a wide pan add oil and butter.
  8. Add peanuts and cashews and fry them.
  9. Add the slit green chillies, onions, ginger - garlic paste.
  10. Fry until onions are translucent.
  11. Add tomatoes and cook for a minute.
  12. Then add grated carrot,salt and cook for 5 minutes covered.
  13. Add the cooked rice and mix.
  14. Garnish with cilantro.
  15. Serve with any curry or raitha.
Ingredients:
1 cup - basmati rice
4 - carrots
1 - onion
1 - tomato
3 - green chillies
2 tsp - ginger and garlic paste
1 tsp - cilantro
Salt to taste

To temper:
2 tsp - oil
2 tsp - butter
1 tsp - cinnamon sticks
4 - cloves
2 tsp - cashew
2 tsp - peanuts
