Chick Pea Basmati Rice Salad

Method
  1. Cook rice according to pack instructions. Drain. Season well then toss in dressing. Cool until tepid.
  2. Mix with remaining ingredients then serve mounted on a serving dish with a mixed leaf green salad.

Ingredients:
250g - brown basmati rice
75 ml - French dressing
4 - salad onions, sliced
1 - small red pepper, chopped
1 - carrot, coarsely grated
125g - sprouted lentils or bean sprouts
75g - roasted hazelnuts or peanuts, roughly chopped
420g - chick peas, drained
3 tbsp - chopped fresh parsley
Salt and ground black pepper
