Coconut Mustard Rice

Method
  1. Cook the rice separately and allow it to cool.

  2. Blend the coconut , red chillies , mustard seeds and tamarind paste or juice in a food processor or a blender without adding water.

  3. Heat oil in a pan or kadai, add the whole peanuts fry it till it turns light brown. Then add the curry leaves and then add the blended masala. Fry this paste for 5 to 6 mts or until all the ingredients are well incorporated.

  4. Add salt to the masala and mix it with rice. Eat it hot and enjoy.

Ingredients:
Basmathi or any other type of Rice - 3 cups
Fresh Grated Coconut - 2 cups
Mustard Seeds - 1 Tbsp(raw)
Red Chillies - 6 or 7
Curry Leaves - 2 stalks
Salt - According to taste
Oil - 1 Tbsp
Peanuts - 2 Tbsp (optional)
Tamarind paste or juice - 1 tsp paste or 2 tsp of juice
