Corn Dum Biryani

Method
  1. Wash and soak the rice for 30 mins. Parboil the rice and set aside.
  2. Make a paste of the ginger and garlic and set aside.
  3. Heat the oil in a pan, add the ginger-garlic paste and sauté.
  4. Add the chopped vegetables (onion, potato, French beans, cauliflower and capsicum) and sauté for 3 mins.
  5. Add the salt, chilli powder, khada masala, powder masala sweet corn kernels and yoghurt.
  6. Bring it to boil such that it forms a gravy. Add the sweet corn cobs on the gravy.
  7. Mix well and add the parboiled rice to the gravy.
  8. Spread the ghee on the rice. Place the biryani on dum for about 30 mins.
  9. Garnish with slices of onion, tomato and lime and sprinkle with coriander leaves.
Ingredients:
1 kg. basmati rice,
30 gms. ginger,
30 gms. garlic,
50 ml. corn oil,
300 gms. onion,
chopped; 250 gms. potato chopped;
100 gms. french beans chopped
200 gms. cauliflower chopped;
100 gms. capsicum chopped
50 gms. salt,
80 gms. red chilli powder,
25 gms. khada masala (a mix of bay leaves, cumin seeds,
cinnamon,
cardamoms,
cloves and black pepper seeds),
20 gms. powder masala (mix of cumin powder)
jaipatri,
cinnamon and cardamom powders),
1 kg. sweet corn kernels (chunks),
350 gms. yoghurt,
1 kg. sweet corn on cub,
cut into slices of
about 5 cm. thickness,
50 gms. ghee.

For garnishing :
1 slice each of onion,
tomato,
lime,
1 sprig coriander leaves,
finely chopped.
