MethodTo make rice flour:
- Soak the rice for about 3 hours and strain it.
- Spread the rice on a cloth or a plate and dry the same.
- Grind the dried rice to a fine powder.
To make puttu:
- Add salt and water to the rice flour. This is a tricky part.
- Don`t add too much or too little water.
- Try to make a lump out of the wet mixture and ensure that the lump does not break off.
- This is the right stage when you
need to stop adding the water.
- Now add a handful of grated coconut in the puttu maker followed by three handfuls of rice flour and again
followed by one handful of grated coconut.
- Follow this step till you reach the top of the cylinder.
- Cover with the lid and steam for 2-3 minutes.
Tip: If you don`t have a puttu maker, you can still use the idli plate. Fill the layers of coconut and rice flour in the
idli plate and cook it in the pressure cooker.
