Sugar Athirasam

Method
  1. Soak the rice in water for 2 hours.
  2. Drain the water and spread the rice on a clean cloth to dry.
  3. Powder the rice [partly dry] with sukku and cardamom.
  4. Sieve it to get a fine powder.
  5. Add 1/4 cup water in a thick bottommed pan
  6. Add the sugar and boil
  7. When sugar melts after 5 mins, check the consistency by pouring the syrup in a cup of water
  8. It should roll into a soft ball.
  9. This is the right consistency.
  10. Remove from the fire and add the rice flour
  11. Stir well till you get a chappathi-like dough.
  12. Make small balls of the dough, spread some oil on the plate, place the ball on it to form small puris.
  13. Deep fry in hot oil until it is golden in colour.
Ingredients:
600 g - raw rice
400 g - sugar
2 inch piece - dry ginger
10 - cardamom
oil to fry
