Baked brinjals

Method
  1. Remove stems and cut brinjals into two – from top to bottom.
  2. Scoop out flesh and apply lemon juice to brinjal cavities.
  3. Meanwhile heat oil.
  4. Add ginger-garlic and onions. Brown.
  5. Add tomatoes, brinjal flesh, green chilli paste, chilli powder and salt and pepper.
  6. Cook till soft and add rice and a little cheese.
  7. Spoon mixture into 6 greased brinjal cases and top with plenty of cheese.
  8. Bake in a hot oven till cases are soft and cheese has melted.
  9. Serve hot.
Ingredients:
3 large long brinjals
2 onions, grated
2 tomatoes, chopped
1 tsp. ginger-garlic paste
1 tsp. green chilli paste
½ tsp. chilli powder
½ tsp. lemon juice
3 tbsp. rice, cooked
5 tbsp. oil
Grated cheese as needed
Salt and pepper to taste
