Brinjal Stew with Curds

Method
  1. Mix ginger garlic paste with jeera
  2. Add this to the mixture of cinnamon, cardamom and nutmeg powder with chillies and coriander.
  3. Divide into 2 portions.
  4. Rub half mixture into brinjal and the other into the curds.
  5. Heat ghee fry brinjal on very low heat till done.
  6. Add curds and mix well.
  7. Simmer for 2 mts.
  8. Serve with brown rice.

Ingredients:
500g - long brinjal slit cut into cubes
1 kg - dahi beaten
3-4 - green chillies chopped
3 tbsp - chopped dhania leaves
Salt to taste
4 tbsp - ghee
1 tbsp - ginger garlic paste
3 tsp - jeera seeds
1 tsp - mixed powder of cinnamon cardamom and nutmeg
