Mix flour and salt, knead into soft smooth dough.
Keep aside for 15 minutes, knead again if required.
For stuffing
Heat oil, add ginger, garlic, chillies, stir.
Add broccoli, stir for 2-3 minutes.
Add salt, mix and take off fire.
Mix into mashed potatoes.
Keep aside to cool a little.
To proceed
Take a pingpong ball sized dough, shape round.
Roll into a thick chappati, 5” in diameter.
Place same sized ball of stuffing in center of chappati.
Cover by lifting chappati from all sides towards center.
Press lightly, dust with dry flour, roll into 7” diameter rounds.
Heat a griddle, shallow fry each paratha till golden and crisp.
Serve hot with chutney or ketchup.
