Method
  1. Peel and crush garlic to a smooth paste with a little salt.
  2. Cover tomatoes with boiling water, leave for 30 seconds, then drain, skin and roughly chop.
  3. Peel and rough chop onion and cucumber.
  4. Remove stalk, seeds and core from pepper, cut into pieces.
  5. Discard crusts and cut bread into pieces.
  6. Place all prepared ingredients in a bowl with half the tomato juice, tomato puree and oil.
  7. Leave to stand for 10 mins, then liquidize in an electric blender.
  8. Stir in remaining tomato juice, vinegar, lemon juice, sugar, herb and season to taste with salt and pepper.
  9. Serve well chilled with accompaniments.
Ingredients:
1 or 2 cloves of garlic
Salt
450 gms. tomatoes
1 medium sized onion
1/2 cucumber
1 green pepper
75 gms. white bread
425 gms. tomato juice
1 rounded tablespoon tomato puree
4 tbsp. oil
4 tbsp. wine vinegar
1 tsp. lemon juice
1 level tsp. castor sugar
Good pinch of dried oregano
Or 2 level tsp. of chopped fresh marjoram
pepper

Accompaniments:
Fried bread croutons
Diced cucumber
Chopped onion
Chopped green pepper
