Ivy gourd fry

Method
  1. Wash and cut kovakkai length wise, slit into two pieces.
  2. Heat oil in a pan/kadai, splutter mustard seeds, black gram dal (split), curry leaves, hing.
  3. Then add onions, tomatoes, fry for some time.
  4. Add kovakkai, red chilly powder, coriander powder, turmeric powder, a little salt and fry for some 10 minutes till the vegetable is cooked well.
  5. Serve hot.

Ingredients:
1/2 kg - ivy gourd/kovakkai
1 - onion
1 - tomato
1 tbsp - red chilli powder
2 tbsp - coriander powder
1 tsp - turmeric powder
Asafoetida, a pinch
Salt to taste

For tempering:
Oil, for frying
1 tsp - mustard seeds
1 tsp - cumin seeds
1 tbsp - Black gram dal
Curry leaves, a small quantity
