Mixed vegetable kootu

Method
  1. Peel the skin of chayote squash.
  2. Chop all the veggies.
  3. Pressure cook them with rest of the ingredient and water for 3 whistles.
  4. Do the seasoning and add it to the mixture.
  5. Serve with hot rice or rotis.
Note: Make sure you add the right amount of water. About 1.5 to 2 cups should be sufficient.

Ingredients:
1 small - chayote squash (Chow Chow)
10 - beans
1 - carrot
1/4 cup - peas
1/4 cup - moong dal
1.5 tsp - sambar powder
Turmeric powder, a pinch
Asafoetida, a pinchv Salt

Seasoning:
1 tsp - coconut oil
1/4 tsp - cumin
1/4 tsp - mustard seeds
1 sprig - curry leaves
