Boil potatoes in pressure cooker for 1-2 whistles till well cooked. Peel and keep aside.
In a wok warm the oil (do not allow to smoke). Add minutely cubed garlic and galangal - saute on low heat for 2 minutes.
Add cooked potatoes and salt - mix - take care not to break the potatoes. When potatoes have become slightly brown, add ground pepper and saute on medium heat for 2 minutes.
Serve hot as accompaniment to rotis / rice or as a starter.
* Maa Ingi is the Tamil name for galangal. This is a milder, juicier and non-fibrous variation of ginger; easily available at your local grocery.
