Ridgegourd Peels Chutney

Method
  1. Wash and drain peels.
  2. Heat oil in a pan, add peels, stir fry for 2 minutes.
  3. Take off fire, cool.
  4. Place peels with oil in a small mixie.
  5. Add all other ingredients, grind to a smooth chutney.
  6. Adjust salt, chilli, as per taste.
  7. Add a dash of sugar if desired.
  8. Serve as a novel accompaniment to bhajias, etc.
  9. May also be used as sandwich chutney.

Making time: 15 minutes
Makes: 3/4 cup chutney
Shelflife: 1 day refrigerated

Ingredients:
1 cup fresh ridgegourd peels
2 flakes garlic (optional)
2 green chillies chopped
3-4 sprigs mint leaves
1 stalk curry leaves
2 sprigs coriander leaves
1/2 lemon juice extracted
1/2 tsp. cuminseeds
1 pinch asafoetida
1 tsp. oil
salt to taste
