Method
  1. Heat oil in a kerahi. Add panch phoron.
  2. When spluttering stops, add potatoes, horse radish, parwal.
  3. Stir fry for 5 mins. Add drumsticks and stir.
  4. Cover and cook 5 mins.
  5. Add all the masala pastes. Stir.
  6. Add all the remaining vegetables.
  7. Stir and cover, cook another 5-7 mins.
  8. Add half cup water and simmer until all vegetables are cooked and well blended with the masala.
  9. There should be practically no gravy in the pan.
Ingredients:
4-6 drumsticks, string and cut in 3 inch lengths
2 potatoes, scrubbed, halved and sliced a quarter-inch thick, unpeeled
½ one-inch pieces red pumpkin, with skin
12 one-inch pieces brinjals, halved and cut in one-inch pieces with skin
1 horse radish, peeled and cut in 1-inch lengths (optional)
4 parwals, scraped, split
1 onion, halved and sliced fine
½ tbsp. turmeric paste
½ tsp. coriander paste (optional)
½ tsp. chilli paste
1 tsp. cumin paste (optional)
1 tsp. mustard paste
A pinch panch phoran
2 tbsps. mustard oil
