Yellow Pumpkin Curry

Method
  1. Cut the yellow pumpkin into small pieces.
  2. Heat oil in a kadai.
  3. Add the mustard seeds and allow it to splutter.
  4. Add the dry chillies and asafoetida.
  5. Add the yellow pumpkin and cook for 3-4 minutes.
  6. Add the jaggery, coconut and salt.
  7. Serve hot with rice and sambar.
Ingredients:
1/4 Kg - yellow pumpkin
1 tbsp - grated coconut
1 tsp - powdered jaggery
1 tsp - mustard seeds
4 - dry chillies
A pinch of asafoetida
Salt to taste
Oil to fry
