Method
  1. De-pod beans.
  2. Hand-crush roughly.
  3. Sieve refined flour with half a teaspoon salt.
  4. Add 1 tbsp oil. Knead stiff dough with water.
  5. Set aside to ferment for 30 minutes.
  6. Mix all herbs and spices in the beans.
  7. Toss well. Heat frying oil.
  8. Roll out small roundels from flour dough.
  9. Take a spoonful of bean mixture and place in the centre.
  10. Roll around the flour.
  11. Fry in medium hot oil.
  12. Blot on tissues.
  13. Serve with hot and sweet chutneys.
Ingredients:
500 g - lilva (hyacinth beans)
250 g - maida (refined flour)
10 g - cumin
10 g - coriander seeds
30 g - green chillies
5 g - chilly powder
25 g - garam masala
25 g - coriander leaves 3 tbsp - lime juice
salt to taste
ground nut oil, for frying
