Method
- Wash and wipe okra, checking and discarding any infected ones.
- Mix all other ingredients together in a large bowl.
- Put in okra, and toss to coat with marinating mixture.
- Keep aside for 30 minutes or refrigerate till required.
- Pierce the okras side to side into skewer.
- Place over hot coals or bbq or under a grill.
- Rotate occasionally and all to cook enough to tenderize.
- Brush with a little oil in between if required.
- Serve hot with other bbqued veggies, dips and rice.
