Method
  1. Wash and wipe okra, checking and discarding any infected ones.
  2. Mix all other ingredients together in a large bowl.
  3. Put in okra, and toss to coat with marinating mixture.
  4. Keep aside for 30 minutes or refrigerate till required.
  5. Pierce the okras side to side into skewer.
  6. Place over hot coals or bbq or under a grill.
  7. Rotate occasionally and all to cook enough to tenderize.
  8. Brush with a little oil in between if required.
  9. Serve hot with other bbqued veggies, dips and rice.

Making time: 30 minutes (excluding marinating time)
Makes: 4-5 servings
Shelflife: Before roasting 1 day refrigerated

Ingredients:
20-25 tender plump healthy okra (the lightgreen, 9 ridge ones are best for bbqs)
1 tsp. lemon juice
1/4 tsp. turmeric powder
1/4 tsp. tandoori masala
1/2 tsp. sugar
1/4 tsp. dried mint powder
1/4 cup curds (hung for 45 minutes)
1 tsp. olive oil
salt to taste
