Three Chana and Capsicum Salad

Method
  1. Soak the three chanas separately and cook separately to retain their color.
  2. Combine first set of ingredients together.
  3. Combine the dressing ingredients together and pour over the chana mixture.
  4. Toss and serve, topped with shredded lettuce.
Ingredients:
1 cup - cooked white chana
1 cup - cooked brown chana
1 cup - cooked green chana
1/2 cup - green capsicum, chopped
1 cup - red capsicum, chopped
1 cup - yellow capsicum, chopped
1 cup - spring onion, chopped

For Dressing:
2 tbsp - olive oil
2 tbsp - yellow mustard
2 tbsp - lime juice
2 tbsp - honey
Lettuce to garnish
Pepper to taste
Salt to taste
