Sweet Coconut Rice

Method
  1. Soak rice in water for 15 minutes.
  2. Heat ghee. Roast almonds and set aside.
  3. In the same pan, add rinsed rice and fry for a minute. add 1 cup of water, cardamom, coconut, saffron, cloves and bring the mixture to a boil.
  4. Simmer and cover with a lid and cook till the rice is 90% done (approximately 10 minutes).
  5. Add sugar and condensed milk and mix everything well and cook for another 2 minutes.
  6. Garnish with roasted nuts.

Note: Condensed milk can be replaced with regular milk for a lighter version of this rice.

1 tbsp - ghee
4 - chopped almonds
saffron, a few strands
cardamom, a pinch
1/3 cup - coconut
1 tbsp - condensed milk (optional)
