Brinjal Curry

Method
  1. Cut the brinjals into small pieces.
  2. In pan add oil, add little jeera (cumin), mustard seeds, udad dal and curry leaves.
  3. After they are little brown, add the brinjal (egg plant) pieces.
  4. Add salt and cover it with lid and cook till soft.
  5. Then in mixer, add one small onion, green chillies, a small piece of ginger and 4-5 cloves of garlic and coriander.
  6. Grind it into a paste.
  7. Once the brinjals are cooked, add this paste in it and cover it with a lid and cook for 5 minutes on low flame.
  8. Serve hot with rice or even chappatis.
