Brinjal Rice

Method
  1. Wash and keep rice in pressure cooker after adding a pinch of salt.
  2. After cooking spread it in a plate and allow it to cool.
  3. Cut brinjals length wise and soak in water after adding a pinch of salt to it.
  4. Boil the brinjals and keep it aside.
  5. Cut onions, grind ginger and green chillies and make it to a paste.
  6. Fry poppy seeds,cinnamon and coconut and keep it aside.
  7. Fry cashew nuts and keep it separately.
  8. Heat oil in a pan, splutter mustard seeds, cumin seeds, curry leaves, cashew nuts, then add ginger paste, coconut paste to it, turmeric and add chopped onions.
  9. Fry them well, now add boiled brinjals.
  10. Deep fry them until it forms like gravy.
  11. Now mix the gravy with the rice and serve hot.
  12. Hot and tasty brinjal rice is delicious and ready to be served.
  13. Serve brinjal rice with potato chips.

Note: Brinjals should be soaked in water once it is cut, else it will turn black.

1/4 kg - brinjal/egg plant
1 cup - raw rice
1 - onions
4 - green chillies
ginger, small quantity
poppy seeds, small quantity
grated/shredded coconut, small quantity
mustard, small quantity
cumin seeds, small quantity
curry leaves, small quantity
cashew nuts, small quantity
turmeric powder, small quantity
1 stick - cinnamon
salt to taste
oil for frying
