Peanut Brinjal

Method
  1. Soak groundnuts in water for half an hour.
  2. Remove skin and grind to a fine paste. Fry this paste nicely till brown.
  3. Cut brinjals and potatoes lengthwise and saute in a little oil.
  4. Fry ground onion till golden brown.
  5. Add garlic paste and fry. Add fried groundnut paste.
  6. Add turmeric powder, red chilli powder, salt and coriander powder mixed in a little water.
  7. Add tomato puree and cook for a little while.
  8. Add fried brinjals and potatoes.
  9. Add 2 cups of water.
  10. Cook covered till brinjals and potatoes are tender.
  11. Garnish with coriander leaves.
  12. Serve hot with rotis/rice.
Ingredients:
250 g - brinjals (long)
8 to 9 cloves - garlic
50 g - groundnuts
3 - tomatoes, medium sized, pureed
2 - potatoes, large
1 - onions, large, ground
1 to 2 - green chillies
1 tsp - turmeric powder
2 tsp - red chilli powder
2 to 3 tsp - coriander powder
2 cups - water
2 tbsp - oil
coriander leaves for garnishing
salt to taste
