Corn, Ginger and Green Chilli Salsa

Method
  1. Boil the kernels in a mixture of 2 tbsps. water, ginger juice, oil, salt and sugar.
  2. Cook over medium heat.
  3. Heat oil in a saucepan.
  4. Sauté the onions on medium heat for about 3-4 mins.
  5. Add to all the other ingredients. Mix well in a bowl.
  6. Serve with chicken, grilled lamb or as a garnish for soup.
Ingredients:
2 cups - corn kernels
6 - green chillies, roasted, peeled, seeded and finely chopped
1 - red capsicum, roasted, peeled, seeded and finely diced
2 tbsp - ginger juice
1 1/2 tsp - olive oil
1/4 tsp - sugar
5 tbsps - onion, finely chopped
1 1/4 tbsp - oil
1/4 tsp - coriander powder
1 tbsp - finely chopped basil leaves
salt to taste
