Method
- Soak the rice for 30min in water. heat some Butter/Ghee/Oil in a non stick pan and saute chopped onions along with bay leaf, cloves, pepper, garlic and cumin.
- Once the onions get soft, add the drained rice and saute for another 3-4 min till the rice gets lightly pink.
- Add 2 1/2 cup water and salt , mix well and then close the lid and cook for another 5-8 min till the rice is 80% cooked.
- Add the peas at this point and mix it gently along with the rice.
- Cook for another 5 min until done.
- Garnish with cashews, mint and cilantro.
- Serve hot and it goes well with any side dish that you can think of. From simple Raita to rich dishes like Shahi Paneer
