Method
- Soak chic peas in cold water, overnight.
- Drain and place in a saucepan.
- Cover with fresh water, bring to the boil, cover and simmer until tender but not mushy, about 45 mins.
Drain and place in a bowl.
- Peel and crush garlic to a smooth paste with a little salt.
- Mix garlic, oil, lemon juice, a shake of pepper and soya sauce together.
- Pour over chick peas. Stone olives and chop.
- Sprinkle over chic peas with parsley.
- Mix well and chill. Wash and shred lettuce.
- Place in a salad bowl and pile chick peas on top.

1 tsp - soya sauce
10 - black olives
1 rounded tbsp - chopped parsley
1 tbsp - lemon juice
8 - lettuce leaves

salt
