Spinach Roll Up

Method
  1. Combine spinach, butter, grated cheese, sifted flour, salt, pepper and mustard to taste.
  2. Grease a baking tin. Line with greasproof paper, butter and flour the paper.
  3. Pour in the spinach mixture.
  4. Bake at 200ÂșC for about 10 mins.
  5. Invert and quickly peel off the paper, spread the filling on top, and raising the paper as a support, gently roll up.

For Filling:

  1. Fry the chopped onions in 2 tbsps. butter till golden brown.
  2. Add the tomatoes, skinned and chopped and fry till slightly dry.
  3. Add the chopped paneer, chopped capsicums, salt and pepper to taste.
  4. Serve the roll with fresh tomato sauce.

1 cup - boiled spinach
1 tbsp - melted butter
1 tbsp - grated cheese
2 tbsps - sifted flour
salt, pepper and mustard to taste
2 - chopped onions
2 tbsps - butter
2 - large tomatoes
250 g - chopped paneer
2 - chopped capsicums
salt and pepper to taste
