Method

  1. Wash and soak rice and dals for 3 hours.

  2. Grind to a smooth thick batter.

  3. Add soda and salt, keep aside overnight.

  4. Add grated vegetables, mix well.

  5. Cut banana leaf into 2"x 2" squares

  6. Grease each on of them.

  7. Place a ladleful of batter on one piece.

  8. Cover with another piece and press very lightly.

  9. Repeat with remaining batter.

  10. Place each leaf sandwich on a hot thick griddle, and cook for 2 minutes.

  11. Flip and cook other side.

  12. Remove as for steamed ones.

  13. To eat, peel of banana leaf sections, and eat soft panki.

  14. Serve hot with chutney or ketchup, as desired.

Making time: 15 minutes (excluding soaking and grinding time) Makes: 7-8 pankis Shelflife: Best fresh, batter refrigerated 1 day

Ingredients:
1/2 cup rice
12 cup yellow dal
1 tbsp. urad dal
1 cob corn grated
1 onion grated
1 tbsp. curds
2-3 pinches soda bicarb
1 tbsp. oil
salt to taste
1 large banana leaf
