Method
- Boil the potatoes. Peel, grate and mash (the mashed potato should be very smooth)
- Tie the Maida in a thin cloth and steam for 15-20 minutes.
- Open the bundle, and break the lump while hot with a ladle.
- When it is slightly cooled, powder with fingers and sift.
- Mix the sifted Maida with mashed potato.
- Add rest of the ingredients except the oil.
- Add enough water and make a soft but not sticky dough.
- Place some dough in a chakli mould and press discs of concentric circles on a sheet of plastic.
- Fry the chaklis, few at a time in moderately hot oil till crisp.
- Cool and store in an air tight container.

½ kg - potato
2 cup - maida
1 tsp - chilli powder
1 tsp - cumin seeds
2 tbsp - butter
oil to deep fry
salt to taste
