Baigan dahi vada

  1. To prepare the baigan: Peel the baigan and cut into fine round slices.
  2. Make batter with besan, ginger-garlic paste, green chillies, turmeric and salt.
  3. Dip the baigan slices in this and fry in hot oil till deep brown.
  4. Remove and soak in water.
  5. Squeeze dry and arrange in a pie dish.
  6. Beat yoghurt well, adding in ½ tsp salt, 2 tsps. sugar and 1 tsp. chaat masala.
  7. Pour this over the baigan completely spreading it out.
  8. Sprinkle the roasted powdered masala.
  9. Spread the tomatoes, capsicum and fried potatoes and serve at room temperature.
1/2 kg brinjal/baigan
1/2 kg yoghurt
1 cup gram flour (besan)
1 tbsp ginger-garlic paste
2-3 green chillies, finely chopped
1 tsp turmeric powder
Salt to taste
2 tsp sugar
1 tsp chaat masala
Oil for frying

For garnishing:
Roast slightly and pound to a coarse powder:
1 tsp. cumin seeds (jeera), 8-10 Pepper whole, 1/4 tsp. mustard seeds, 1/4 tsp. methi seeds.
Add to it: 1/2 tsp. red chilli powder (coarse) and salt to taste.
100 gms. tomatoes, finely chopped
100 gms. capsicum, finely chopped
2 potatoes, sliced and fried
