Method
- With the help of a stick or a skewer, pierce and roast the brinjal over open flame on the gas stove.
- Once done, you can scrap the skin of the brinjal and get the pulp now soft and cooked.
- Mash the pulp with a spoon and add this to the fresh curd.
- Heat the oil for frying and add the mustard seeds.
- Once they splutter, switch of the gas stove and pour the seeds over the curds and brinjal.
- Add chopped onion, tomatoes and green chillies.
- Add salt to taste and mix well.
- This can be served with any pulao or flavored rice.
Note: In case you feel the brinjal has not roasted enough, you can always fry it along with the mustard seeds and then follow the rest of the recipe.
