Method
  1. Peel and halve cucumber lengthwise.

  2. Scoop out the seeds, leaving furrows in centre.

  3. Slice all halves horizontally, into thin slices.

  4. Combine all other ingredients to make a dressing.

  5. Refrigerate cucumber till required.

  6. Add dressing about half an hour before serving, toss well.

  7. Serve chilled as a salad or accopaniment.

Makes: 3 servings
Shelflife: Best fresh

Ingredients:
2 large cucumbers
1 tbsp. palm sugar
1 tbsp. white vinegar
2 sprigs fresh mint leaves, finely chopped
salt to taste
