Method
  1. Boil the chana/rajma/moong/black beans in the cooker.
  2. Boil the potatoes separately. On cooling, smash them and add some salt. Mix well and make a paste.
  3. In a kadai or frying pan, put the onions, green chillies, ginger, peanuts, paneer(optional- can be avoided by weight conscious individuals) in a little oil (amount of oil can be limited as per your choice). When the onions turn brown, add the tomatoes. When it is done, add the carrot, cauliflower, green peas and add the water used to boil the beans from the cooker (using that water helps preserve the vitamins). Then, add haldi (turmeric)and salt and chilly powder according to taste. When the vegetables have boiled and the water has evaporated, add the beans/chana/moong. Add coriander, mix well and keep aside.
  4. Take a tortilla/roti, and apply some sauce/green chutney or any masala powder/paste as per your taste and spread the mashed potato paste over it. Then spread the cooked vegetable- bean mixture over it. Add grated cheese (optional, can be avoided by the weight concious). Now roll the tortilla; you can apply some ghee or butter on the outside of the tortilla if you wish; but I prefer avoiding butter/cheese/ghee/paneer. Cut it into 3 parts carefully.
  5. Keep the stuffed tortilla (burrito) into an oven at 350 degree for 45 minutes. You can check in between (after 30 minutes) to see if you need to bake more or less. Do not overbake.

    For those who do not like to use the oven, you can just heat the the burrito on a pan and turn it over after every 3 minutes until it is brown and crisp
  6. Delicious vegetarian burrito ready! Serve with sauce.

2 tortillas/ or 2 self made large sized maida or wheat rotis
Boiled potatoes
Boiled black beans/rajma(kidney beans)
Boiled 'black chana'
Boiled sprouted moong
Fine chopped onions
Fine chopped tomatoes
Carrots (cut in small pieces)
Green peas
Cheese (optional)
Paneer -small pieces(optional)
Cauliflower
Peanuts (cut into small pieces)
Ginger (fine chopped)
Green chillies (fine chopped)
Coriander
Green chutney/sauce
Turmeric and chilly powder
Salt
Ghee(optional)
Oil (olive oil/ groundnut oil)
